VINTAGE CONDITIONS
This wine is labelled as non-vintage but is predominantly from the 2016 vintage. During the ripening period from the end of January and throughout March the weather was warm and dry. These ideal conditions allowed the vines to flourish and ripen evenly to produce a final wine with good depth of colour and fresh, vibrant fruit aroma and flavour.
WINEMAKING/VITICULTURE
Primary fermentation of the base wine was carried out in a combination of static and rotary fermenters under warm temperature conditions for a period of 6 days. This creates a good balance between extracting the appropriate tannin for wine structure and retaining fruit drive and aromatics. The secondary fermentation (to create the bubbles) was carried out via the Charmat method.
TERROIR/SITE
The vineyards selected for this blend grow fruit perfect for producing fresh, varietal wines. Sandy soils of varying depths over limestone require careful water management as they readily dry out during the summer months. With this in mind, strategies involving supplementary irrigation and also canopy management are adapted to suit individual vineyard sites in order to provide a good balance of light and shade in the canopy and therefore maximise fruit quality.

Colour
Bright magenta with red hues.
Aroma
Vibrant aromas of fresh plums and dark cherry with underlying floral and violet notes.
Palate
The palate is filled with generous blackberry and plum fruit flavours. The mid palate sweetness is complemented by firmtannins and hints of Cherry Ripe chocolate and spice. Bright fruit flavours drive the palate to a persistent finish.
