Bourke & Travers Single Vineyard Shiraz 2023 (12x 750mL) Clare Valley

Description:

Shiraz was picked in three different parcels on 23 and 25 March. We used a total

of 30% whole bunch and fermented six parcels in a combination of 1, 2 (and a

single five tonne) vessels. Post malolactic fermentation, all ferments were basket

pressed after 16 days on skins. The wine was aged for 12 months in old and new

500 litre French puncheons and a pair of 600L demi muids. The outcome is a

balanced wine presenting an equilibrium of acids and tannins.

Winery Tasting Notes

This vintage reflects more savoury dimensions with hints of woody spice, cloves and subtle black peppercorn. Its fruit profile is of warm plums and ripening cherries – with soft chocolate flavours. Tannin influences have been reduced in latter vintages through variations in pressing, extraction and whole bunch fermentation techniques.
