WINEMAKING
Fruit selected from the Clare Valley region was harvested in the cool of the night and gently pressed in order to maximise freshness and flavour in the juice. The juice was then cold settled and cool fermented in stainless steel with yeast strains selected to enhance the natural varietal characters. After a short period of time on yeast lees the wine was bottled to preserve freshness.

Vineyards in Clare Valley have shown resilience through drought conditions with vintage 2019 producing lower yields with high quality fruit. The lower than average winter and spring rainfall produced smaller canopies and berries which have enhanced quality in some varieties. Whilst low yields prompted a brief harvest, the reds were sun-blessed and show great colour and varietal intensity. Sangiovese in particular has been a standout in quality and colour this vintage.

Winery Profile
After nearly three decades of growing grapes for some of Australia’s best known wine brands, the Zilzie winery was built in 1999 with the first vintage released under the Zilzie name in 2000.
The increasingly popular and distinctive Selection 23 range was introduced in 2004, while 2008 saw the re-release of our Bulloak range.
2009 has seen the culmination of many years dedication to selective vineyard sourcing deliver the “REGIONAL COLLECTION” of Zilzie wines. We’ve combed Australia’s best known wine regions, specifically targeting the varieties they excel at, for exceptional grape parcels to produce these wines.
We’ve come a long way in 10 years, with our winery tripling in capacity, and our range growing from the humble beginnings of four varieties, to now include consumer favourites such as Pinot Grigio, Moscato and Rosé.
It’s not all about size, Zilzie is also recognised for its exceptional quality, having won 27 trophies in its short history and is the only winery from our region rated 4.5 stars by James Halliday in his 2009 Wine Companion.
