Evans & Tate Hullabaloo Cabernet Sauvignon 2018 (6x 750mL) Margaret River

Description:

2018 was an extraordinary vintage in Margaret River, with wet winter months followed by a warm spring

to promote budburst and a dry early summer perfect for fruit set. Isolated, well timed rain assisted vine

health and ripening, with a beautiful late summer of warm days and cool nights; ideal conditions for

accentuating the flavour, ripeness and acid balance of the grapes.

A special block of Cabernet Sauvignon in the Wilyabrup area was selected to make this wine to depict the

essence of the darker, black style of Margaret River Cabernet Sauvignon from this renowned wine growing

region. Handpicked fruit was crushed and destemmed before being cold soaked on skins prior to

fermentation. The wine was racked off lees into a combination of French oak barriques (225L) and

hogsheads (300L) where they underwent a short malolactic fermentation. After 16 months in barrel, and

being racked every 3 months, each barrel was individually tasted and assessed to determine the

composition of the final blend. The wine was then carefully blended following these trials and lightly fined

with fresh, local free-range egg whites before being filtered once and undergoing extended maturation in

bottle prior to release.

Winery Profile

A passion to pursue paths untrodden has seen us explore the possibilities of modern winemaking. Pairing style with innovation, we are one of Western Australia's original winemakers, but we are also one of Western Australia's future winemakers.

While others persist with the current, we are willing to do things differently. We create timeless styles that you gravitate towards year after year through trust and familiarity. And in the spirit of unpredictability and intrigue, we create fresh, new styles that have an undeniable allure. Whether you're out dining with friends, enjoying a glass at home or need something special to celebrate with - we make wines that complement your lifestyle. And because we know they taste great, you can be assured that our wines will reflect your great taste.

Our wines are made for you, not winemakers. We love to engage you with our ability to surprise and we want our wines to inspire your own story, your own moments. Because at Evans & Tate, we believe the possibilities are endless.

The winery has a growing international presence and can be found in 14 countries across the world. At home, Evans & Tate is the number one Margaret River producer by value (Nielsen MAT 31/3/2010) and was recently named a five star winery in James Halliday's 2011 Wine Companion.
