Colour: Deep, mature tawny-red with a rich mahogany core.

Aroma: An intense, sweet bouquet of liqueur cherry chocolates, ripe plum, and briar, giving way to complex undertones of caramel, exotic spice, and a faint gamey meatiness.

Palate: Sumptuous, velvety, and unctuous. The palate delivers profound concentration and presence, with dark cherry and stewed plum flavours backed by a serious, powerful structural frame.

Finish: Exceptionally long and authoritative, where firm, persistent tannins harmonise with complex touches of tar, herbs, and dark spice.

Colour: Medium garnet-red with an inviting, translucent brick-red rim.

Aroma: A benchmark Yarra Valley nose, beautifully perfumed with wild strawberry, raspberry, and sour red cherry, intricately layered with forest floor, sweet sous-bois, dried flowers, and classy French oak spice.

Palate: Silk and precision on the palate. A vibrant, mid-weight core of red fruits is seamlessly interwoven with complex undertones of earth, truffles, and delicate stalk work, showcasing immense harmony and tension.

Finish: Exceptionally long, bright, and clean, supported by a refreshing line of mineral acidity and framed by ultra-fine, powdery tannins.

Light but bright hue; a light-bodied, elegant wine, the light plum and spice fruit as yet very restrained. History shows it will develop given time.

Winery Profile

The pinot noir vines, originally acquired from Western Victoria in 1971 before individual clonal selections were considered, are planted on sandy clay loams overlaying degenerating Silurain shales.

A relatively short seven day fermentation in 70% open pot and 30% stainless steel static fermenters takes place. This is followed by 12 months barrel maturation in 15% new French oak barriques and seasoned oak, including 30% in large format casks. A further 10 months barrel maturation occurs in seasoned oak barriques.

The wine is typified by fragrant strawberry, cherry aromas and a supple, evenly proportioned palate. It is bottled with Diam closures to allow vital oxygen exchange for the development and maturation of tannins.

Whenever you buy wine there is an inherent risk, as wine is a perishable good regardless of whether it is sealed under cork or screwcap. At GraysOnline we minimise the risk to you by providing as much information as possible regarding the provenance of the wine we sell.

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

Wines displaying a 3 star designation are in good condition when we inspect and we are able to confirm some cellaring conditions but we are unable to verify all ownership and storage conditions of their history.

A wine displaying no stars doesn’t mean that there is a problem with the wine, it simply means that we have been unable to verify provenance, however a quality image is always available for the purchaser to make their own purchasing decisions.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
