WINEMAKING

The 2019 Sauvignon Blanc grapes were machined harvested at optimum ripeness in the coolness of the morning to help retain the fragile vibrant primary fruit flavours. It was transported directly to the winery, crushed and gently pressed to tank and allowed to cold settle. 48 hours later the juice was cleanly racked and inoculated with a selected yeast strain. The ferment temperature was kept at around 14-15 °C, this helps retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. Post ferment after the correct amount of maturation the wine was then blended, fined and bottled.

VINTAGE NOTES

2019 vintage was underpinned by a typical wet winter. Spring was unusually dry promoting ideal growing conditions for balanced vines. Summer and Autumn were relatively mild for a third consecutive year – perfect for flavour development and slower ripening. All fruit easily reached full maturity and the expression of this is seen in the 2019 vintage wines.

NOSE

Aromatic fruit driven nose of new season pears, snow pea sprouts and white peach.

PALATE

Palate follows up with Bosc pears, fresh quince, white peach, light white florals, with refreshing acidity that helps balance the fruit weight for a nicely textured crisp Sauvignon Blanc with good length.

FOOD PAIRING

Spring salad with goat’s cheese and a drizzling of premium olive oil.
