Wine Summary Image

The availability of increased volumes of high-quality Cabernet Sauvignon fruit gave Penfolds the opportunity to develop a wine inspired by Bin 707, but at a more affordable price.

Launched in 1993 with the 1990 vintage, Bin 407 is true to Penfolds’ multi-region, multi-vineyard blending policy. It is textbook Cabernet Sauvignon, showing strong varietal character and medium weight with ripe fruit at centre stage. French and American oak, usually one in four barrels new, is there in support.

Expert Reviews

94 Points. James Halliday - Wine Companion.20 July 2011

Medium to full red-purple; the bouquet leads with blackberry and cassis, with lesser notes of spice and cedar. The wine then shifts more into blackberry and bitter chocolate flavours on the long palate, sustained by lingering tannins. More elegant than the Bin 389, but will also be very long lived.

Winery Tasting Notes

Notes Image

Colour

Deep purple/red with purple hues at rim.

Aroma

Youthful and varietally defined. Leafy, with a suggestion of eucalyptus. Damson plum and subtle soy and mocha notes rise above restrained, cedary oak.

Palate

Tight, with sweet, fleshy, blackcurrant/redcurrant and dark berry fruit. Raspy tannins are caught up in the generous fruit rush, with praline and anise flavours offering additional distractions. The oak is all but soaked up by the fruit. An impressive wine, still very youthful; more generously flavoured than the 1997, similar in stature to the 1996.

Winery Profile

Australia's winemaking history of less than two hundred years is brief by European measures though, like Europe, punctuated by periods of extreme success and difficult times. From the earliest winemaking days Penfolds has figured prominently and few would argue the importance of Penfolds' influence on Australia's winemaking psyche.

Without the influence of Penfolds the modern Australian wine industry would look very different indeed. Sitting comfortably outside of fad and fashion, Penfolds has taken Australian wine to the world on a grand stage and forged a reputation for quality that is without peer.

Penfolds' reputation for making wines of provenance and cellaring potential might suggest a mantle of tradition and formality is the preferred attire of a company with so much history to defend. But to label Penfolds as simply an established and conventional winemaker, would be to confuse tradition with consideration and to overlook the innovative spirit that has driven Penfolds since its foundation, and continues to find expression in modern times.

If there is anything traditional about Penfolds, it is the practice of constantly reviewing the wines it already does well, and continuously evolving and refining styles as vineyards mature and access to ever older and more varied vineyard sites improves.

★ ★ ★ ★ ★

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

★ ★ ★ ★

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

★ ★ ★

Wines displaying a 3 star designation are in good condition when we inspect and we are able to confirm some cellaring conditions but we are unable to verify all ownership and storage conditions of their history.

A wine displaying no stars doesn’t mean that there is a problem with the wine, it simply means that we have been unable to verify provenance, however a quality image is always available for the purchaser to make their own purchasing decisions.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
