Produced in Acate, in the province of Ragusa.This is where rich, mature, and structured Nero d’Avolais obtained. The Nero d’Avolaprefers clay-like soil and is very sensitive to excessive drought and too much exposure to sunlight. The “Espalier” trellising system is used with an average density: approx4500 plants per hectare.

VINIFICATION

Nero d’Avolaripens relatively early by Sicilian standards: harvest around the first week of September. This wine is obtained from grapes that have reached perfect aromatic and polyphenolic maturation. The destemming and the alcoholic fermentation with the skins is done for 6-8 days at 22-2°C. Malolactic fermentation is obtained with selected bacteria. This Nero d'Avolamatures for 6 months in French barriques.CHARACTERISTICSIt shows a deep ruby red with pleasant reflections of violet with a intense bouquet of currant, wild berries and spices. The flavor is soft and velvety with distinct characteristics of fruitiness.PAIRINGSIt is a perfect pairing for baked pasta, red meats lamb, international dishes and savory cheeses.ALCOHOLCONTENT:12,5%SERVINGTEMPERATURE:16-18°C
