Fermented in stainless steel tank and chilled toward the last third of the fermentation to stop the fermentation and retain the natural unfermented sugars and entrained CO2, keeping the wine fresh and lively and well balanced.

Inspired by the rolling hills of the Central Ranges near Orange, “Rolling” wines are sourced from the sub-600m elevations of our single estate grown vineyard where cool temperatures coupled with bright sunlight produce fruit of incredible colour and vibrant flavours. Our Rolling wines are easy drinking as a stand-alone aperitif or a great companion with food. The label iconography sees our heroine Beatrice and her faithful dog Cirro exploring the rolling hills of the single estate vineyard throughout the distinct cool climate seasons.
