Winery Tasting Notes

Notes Image

Colour

The appearance is medium to deep straw. It’s bright and youthful with subtle yellow notes giving an indication of body weight and maturation.

Aroma

The initial aroma is fruit forward with sweet vanilla spice followed by roast cashews and toasty oak progressing to caramel and buttery, baked shortbreads and a fragrant lift of citrus marmalade.

Palate

On entry the palate has stone fruits, figs and honeydew melon followed by vanilla cream, cashew and hazelnuts. The rich buttered toast and creamy pastry flavours are balanced by a savoury belt of tangy preserved lemon and quince paste. The finish is long and dry with subtle oak and musky spice on the aftertaste.

Food Matching

Lightly chilled, this full bodied, creamy chardonnay is well suited to hearty, flavoursome dishes like lobster thermidor, roast chicken or vindaloo curry. It’s a very versatile, food friendly wine that can be paired with the most sophisticated dishes like Foie gras or cheese souffle to humble favourite’s like pasta carbonara or cheese toasties.

Cellaring Potential

With two and a half years cellar aging and further time in bottle before release, this chardonnay is ready to drink now. It will comfortably cellar for longer and continue to deliver enjoyable drinking. Serve lightly chilled for the best experience.

Winery Profile

The “Reserve” label is kept for premium parcels of outstanding wine identified by Peter Jorgensen for their rich fruit intensity, complex flavours and structure combined with their long term aging ability. At the core of all “Reserve” wines is premium vineyard management and minimal intervention winemaking. The resulting wines are limited quantity batches of natural wines with minimal filtration or additives. They are wines that take time to evolve and are given extended cellar maturation to allow all elements to become integrated before bottling. The aging process will continue in bottle and this wine will develop a light crust over time.

Please allow this wine to breathe for 30 minutes prior to consuming.
