The long, cool growing seasons that prevail in Coonawarra and the Terra Rossa over limestone soils combine toprovide ideal conditions for growing grapes for sparkling whites. Hollick have been making sparkling white wines since 1988. The proportion of Chardonnay to Pinot Noir varies from vintage to vintage depending on the characters present in the grapes in the vineyard.

Traditionally, the grapes are picked very early in the season to ensure delicate fruit fl avours and optimum levels of natural acidity. The traditional varieties of Chardonnay and Pinot Noir combine seamlessly, with the Chardonnay providing fi nesse and richness, while the Pinot Noir adds body and complexity. The 2016 growing season displayed a warmer than average October with vintage commencing two weeks early. A cool fi nish with mild ripening conditions saw white varieties develop good natural aciditiess.

Delicate scents of fresh grapefruit & lemon.

FLAVOUR

An elegant sparkling white with fi nely balanced acidity. Subtle fl avours of crisp green apples, strawberries and nougat. A hint of creaminess on the mid-palate, with a long, lingering fi nish.

CELLAR POTENTIAL

Fresh and at its best, we suggest that this wine be enjoyed up to three years from vintage.

Winery Profile

The Hollick winery, cellar door and restaurant complex is established on "Neilson's Block", one of the original John Riddoch Coonawarra selections in the cool South East corner of South Australia.

Driven by quality and a hands-on approach, Hollick wines are made from three core vineyards. Neilson's Block, planted by Ian and Wendy in 1975, the nearby Wilgha vineyard, purchased in 1987 and the Red Ridge vineyard developed in 1998 at Wrattonbully, giving Hollick over 200 acres of vineyard in total. Eighty percent is planted to red varieties, including Cabernet Sauvignon, Merlot, Cabernet Franc, Shiraz, Pinot Noir, Sangiovese and Petit Verdot. The balance of the vineyards are planted to the white varieties of Chardonnay, Riesling, Sauvignon Blanc and Semillon.

A historic cottage, which was restored by Ian and Wendy in 1983 is a feature of the entrance to the winery. Heritage listed and built in 1860, it was the birthplace of famous lyric poet John Shaw Neilson and was the original cellar door.
