Aroma:

Shows some initial restraint but opens up beautifully with a gently perfumed bouquet. Expect lifted aromas of red berries, dark plum, and blackcurrant, alongside classic Margaret River undertones of dark chocolate, sweet mint, and a touch of cedary oak.

Palate:

Elegant and beautifully balanced. The palate is somewhat denser and weightier than previous vintages, showing lovely depth. It features a fleshy mid-palate dominated by ripe plum and cassis. The Cabernet Franc provides a lively crunch and floral lift, while the Merlot contributes to its famous velvety, supple mouthfeel.

Finish:

Tight structure and backbone with a gentle, powdery tannic grip on the finish that keeps the fruit long and focused.

75% cabernet sauvignon, 14% merlot, 8% cabernet franc and 3% malbec. Hand-picked, chilled to 5 degrees C, bunch-sorted followed by individual berry sorting, 50% in a closed fermenter, 14 days skin contact, 35% 32 days skin contact and 15% open-fermented, matured in used French oak. Light colour; place imposes its will, variety less so.

Dr Michael Peterkin of Pierro purchased the nearby Fire Gully property in 1998 and now manages the vineyard, which is also one of the most beautiful and unique properties on the Cape.Attentive, hands-on viticulture and years of experience in the winery has taught us how to create the best wines from high-grade fruit coming in from the vines.During vintage fruit is hand picked, hand sorted, and undergoesgentle treatment and processing in the winery.All Fire Gully wines are hand crafted by the highly respected and experienced team at our nearby sister winer, Pierro.The result is a selection of classic Margaret River wines.We recommend you enjoy Fire Gully wines with your favorite food in the company of good friends.

Whenever you buy wine there is an inherent risk, as wine is a perishable good regardless of whether it is sealed under cork or screwcap. At GraysOnline we minimise the risk to you by providing as much information as possible regarding the provenance of the wine we sell.

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
