Winery Tasting Notes

Colour

The appearance is deep plum red with crimson around the rim. It’s high in alcohol and leaves long sticky legs on the glass.

Aroma

Vintage 2018 in McLaren Vale was dry and produced Shiraz with big up front fruit character and massive alcohol which brings the oak esters to the fore. The bouquet is lifted with sweet brandy soaked fruit and cedar wood shavings. With a little breathing the more savoury elements of black olives and smoked bacon add to the complexity.

Palate

The palate is drier than the bouquet suggests with earthy, smoky characters on the opening palate. The middle shows some aniseed spice with powdery, fine grained tannins giving grip and texture. Oak is well integrated with a hint of coffee and mocha on the back palate. The finish is long and persistent with a nice dry edge.

Food Matching

A herb crusted rack of lamb char grilled on the barbeque is a great match with this wine. The smoky characters enhance the intensity and ready the palate for complex, full flavoured dishes. Its firm dry finish makes it a great pairing with creamy soft cheese and dried muscatels after the meal.

Cellaring Potential

With the benefit of screw cap closure and a cool stable environment this wine will cellar for over 8 years. It will gain complexity over time and develop a mild crust. Breathing for 30 minutes or more before pouring is recommended and decanting is advised as the wine ages.

Winery Profile

The “Reserve” label is kept for premium parcels of outstanding wine identified by Peter Jorgensen for their rich fruit intensity, complex flavours and structure combined with their long term aging ability. At the core of all “Reserve” wines is premium vineyard management and minimal intervention winemaking. The resulting wines are limited quantity batches of natural wines with minimal filtration or additives. They are wines that take time to evolve and are given extended cellar maturation to allow all elements to become integrated before bottling. The aging process will continue in bottle and this wine will develop a light crust over time.
