A blend of Cabernet Sauvignon, Merlot, Malbec and Petit Verdot from a 1969 planted vineyard. Opaque dark red black colour with a dark red hue. The nose shows great finesse with scents of blackcurrant and mulberry emerging over smoky cedar, tobacco, black olive and spice. Medium bodied with an elegant mouthfeel flavours of blackcurrant, mulberry and dark cherry gracefully flow across the palate. Excellent understated richness with nuances of cedar, tobacco and spicy herbs also present. Perfectly integrated very fine grained tannins. Excellent length with a long aftertaste of blackcurrant, dark cherries, mulberries, cedar, tobacco and spicy herbs. Cellar 8-10 years

A cabernet sauvignon-dominant blend, with lesser amounts of merlot, malbec and petit verdot. Excellent hue and depth; this is a top-flight No. 1, fully reflecting the excellent vintage; the flavours are bold and luscious, yet the wine never threatens to lose its shape; first there is the multi-variety complexity, second the perfectly balanced ripe tannins. It almost seems superfluous to mention the new French oak, but it, too, helps weld the wine into its utterly coherent whole.

Winery Profile

Yarra Yering was established in 1969 at the foot of the Warramate Hills in Victoria's Yarra Valley by Dr Bailey Carrodus.

Vineyard management places the emphasis on sustainability, hand picking, hand pruning and cropping at low levels to produce intensely flavoured fruit with great colour and high levels of natural acidity.

The original 30 acre vineyard has gradually been expanded to just on 70 acres of vines with a broad range of varieties from Chardonnay and Pinot Noir through to Cabernet and Shiraz to Portuguese varieties planted on terraces at the top of the vineyard.

The wines are made in the Carrodus designed winery with purpose built equipment. Small batch fermentation in half tonne stainless steel fermenters, pressing in the hand cranked basket press and maturation in a mixture of new and old French oak barriques produces wines of great intensity and finesse.

Elegant, supple and strongly varietal, the wines are attractive while young but will reward cellaring under the proper conditions, reaching their peak of complexity and sophistication after 15-20 years in the bottle.

Dr Carrodus died in 2008 but the traditions he established are being built upon by Paul Bridgeman, the winemaker he appointed in the months before his death, and the vineyard staff who have tended the vines at Yarra Yering for the past thirty years.

Whenever you buy wine there is an inherent risk, as wine is a perishable good regardless of whether it is sealed under cork or screwcap. At GraysOnline we minimise the risk to you by providing as much information as possible regarding the provenance of the wine we sell.

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

Wines displaying a 3 star designation are in good condition when we inspect and we are able to confirm some cellaring conditions but we are unable to verify all ownership and storage conditions of their history.

A wine displaying no stars doesn’t mean that there is a problem with the wine, it simply means that we have been unable to verify provenance, however a quality image is always available for the purchaser to make their own purchasing decisions.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
