Mitolo delivers wines that express purity of varietal flavour, show elegance of structure with soft tannins whilst being rich, powerful and complex. All the grapes are picked on flavour ripeness which contributes to the soft, ripe tannins and vibrant fruit which is a key characteristic of all Mitolo wines. Savitar, the flagship Mitolo Shiraz, is a tightly structured wine produced in very limited quantities. Powerful yet elegant Savitar is opulent, brooding and intense.

VINEYARD

The fruit for Mitolo Savitar Shiraz comes from the Lopresti vineyards Chinese Block, which is located in the Willunga district at the southern end of McLaren Vale. Savitar Shiraz is sourced from a particularly unforgiving, skeletal soil patch in the North Eastern corner of the block, where the vines are pushed hard to create very

low yields of outstanding depth of flavour and quality.

VINTAGE 2009

The growing season began with a wet August followed by a dry spring resulting in an earlier start than normal and strong canopy growth. At Mitolo’s Lopresti vineyard, this strong growth along with sound management techniques and an inherent understanding of the vines allowed the fruit to survive a long spike of heat at the

end of January relatively unscathed. Conditions around this heat were actually quite mild; ideal for grape ripening. Shiraz displayed excellent and deep varietal character with naturally balanced acidity.

VINIFICATION

Each parcel of fruit for Savitar was fermented on skins for 15 days. This slightly longer time on skins ensures a tighter overall structure setting the framework for elongated ageing. Following fermentation, the wine is pressed, and then transferred to oak barrels for maturation. The wine remains in barrels, on lees, for approximately 18 months before individual barrels are carefully selected for the final blend.

APPEARANCE

Intense garnet/plum.

BOUQUET

Dark, brooding plum and blackberry fruit with a decent lick of smoky, spicy oak

PALATE

Rich and opulent, the palate is an attack on the senses, however it is also restrained by encompassing but silky tannins. There is layer upon layer of flavours from the dark and brooding blackberry fruit to the more subtle spicy, toasty oak.

FOOD MATCH

Slow cooked, rosemary and garlic infused, lamb shanks served with green beans and Carisma potato mash

MATURATION

Aged in 100% new medium to light toasted barriques which are 80% French oak (Alliers/Nevers) and 20% French coopered American oak for 18 months. A total of 16 coopers are used for the Mitolo oak regime

When the Mitolo family arrived in Australia in the 1950s they brought their viticulturist ancestry and an ethos belonging to the Abruzzo region - forte e gentile or strong and gentle. The family worked hard to become successful market gardeners while staying true to their origins where food and wine, family and friends, laughter and celebration were an integral part of life.

After years of working in his family’s potato business, Frank Mitolo started making wine for family and friends.

In 1999, after a now legendary 5 hour discussion with winemaker Ben Glaetzer, the pair fashioned a dream of making the ultimate expression of McLaren Vale’s rich provenance of soils. They jotted a six word business plan on the back of a napkin: individuality, integrity, quality, purity, elegance and power.

The first Mitolo wine, the 2000 G.A.M. Shiraz was named after Frank’s children Gemma, Alex and Marco. Since then Mitolo have added another 16 wines to the range each with its own distinct personality and story.

The winery works closely with its growers, the Loprestis. The Loprestis, also Italian immigrants and old friends of the Mitolos, have an affinity with their land, producing fruit of the highest quality. The fruit is the essence of Mitolo, with a depth of flavour garnered from heavy clay soils, yet freshness thanks to the gentle afternoon sea breeze. In the winery, Ben takes a ‘hands-off’ approach, fermenting cool to retain purity, and using a range of barrel coopers to generate complexity yet respect and enhance the fruit.

The Mitolo Italian heritage runs strongly through the range using the Italian varieties and techniques. Business meetings are still held over Sunday lunch with traditional Italian food and of course Mitolo wine shared with friends, old and new. And at the heart of it all, in the wine style, in the people, is the motto that the Mitolos brought from Abruzzo - forte a gentile: strong and gentle.
