Expert Reviews

"Abundant red and black fruit aromas on the bouquet, the oak still integrating; blackcurrant and blackberry fruit are matched by mouth-coating tannins. "

Winery Tasting Notes

Notes Image

Wine Background

Bin 707 is Penfolds Cabernet Sauvignon Grange equivalent: ripe, intensely-flavoured fruit; completing fermentation and matured in new American oak; and expressing the Penfolds’ policy of multi-vineyard, multi-region fruit-sourcing. Named by an ex-Qantas marketing man, Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when the focus shifted to Bin 389) nor in 1981, 1995 or 2000 (when fruit of the required style and quality was not available). Full bodied and with good cellaring potential, Bin 707 has a secure place among the ranks of Australia’s finest Cabernets. Packaged in laser-etched bottles from the 1997 vintage.

Colour

Deep red with a dense core.

Aroma

An immediate, intense lift of pure ripe blackcurrant fruit, laced with mint and the faintest suggestion of violet. Cigar box and fresh tobacco oak notes showcase the sheer fruit quality. Although youthful, the nose already shows true 707 character.

Palate

Powerful and complete. Saturated fruits have soaked up the new oak culminating in a rich, sweet mid-palate and long stylish finish. The depth of fruit and defined structure, coupled with obvious muscular tannins, suggest that this wine is built for the long term. Blackberry and blackcurrant flavours persist long after the wine has been tasted.

Winery Profile

Australia's winemaking history of less than two hundred years is brief by European measures though, like Europe, punctuated by periods of extreme success and difficult times. From the earliest winemaking days Penfolds has figured prominently and few would argue the importance of Penfolds' influence on Australia's winemaking psyche.

Without the influence of Penfolds the modern Australian wine industry would look very different indeed. Sitting comfortably outside of fad and fashion, Penfolds has taken Australian wine to the world on a grand stage and forged a reputation for quality that is without peer.

Penfolds' reputation for making wines of provenance and cellaring potential might suggest a mantle of tradition and formality is the preferred attire of a company with so much history to defend. But to label Penfolds as simply an established and conventional winemaker, would be to confuse tradition with consideration and to overlook the innovative spirit that has driven Penfolds since its foundation, and continues to find expression in modern times.

If there is anything traditional about Penfolds, it is the practice of constantly reviewing the wines it already does well, and continuously evolving and refining styles as vineyards mature and access to ever older and more varied vineyard sites improves.

★ ★ ★ ★ ★

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

★ ★ ★ ★

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

★ ★ ★

Wines displaying a 3 star designation are in good condition when we inspect and we are able to confirm some cellaring conditions but we are unable to verify all ownership and storage conditions of their history.

A wine displaying no stars doesn’t mean that there is a problem with the wine, it simply means that we have been unable to verify provenance, however a quality image is always available for the purchaser to make their own purchasing decisions.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
