All hand harvested as well as processing across a sorting table, only the best berries go into this wine. The Cabernet fruit is crushed to build structure through fermentation. Merlot, Malbec and Petit verdot are whole berry ferments for fragrance and palate flesh. All fermented in half-tonne fermenters and hand plunged twice daily, some of the Cabernet spending extended time on skins. Components kept separate in French oak barrels, only 40% of them new until being blended just before bottling after 15 months barrel maturation.

Stylish, lifted nose settling into itself after a few years in bottle. Shows signature blackberry, aniseed, sarsaparilla, marzipan and cassis with hints of bergamot and sage. A medium-bodied style featuring a fleshy, fruit-layered palate integrated with earthy complexity. Juicy acidity, characteristic of this vineyard, underlays soft expansive fruit and fine dusty tannins. In true Yarra Yering tradition, it combines power with poise, concentration with finesse.

Red Five Star Winery - Australian Wine Companion 2014

The historic Yering Station (or at least the portion of the property on which the cellar door sales and vineyard are established) was purchased by the Rathbone family in 1996 and is also the site of the Yarrabank joint venture with French Champagne house Devaux (see separate entry). A spectacular and very large winery has been erected, handling the Yarrabank sparkling wines and the Yering Station table wines. It immediately became one of the focal points of the Yarra Valley, particularly as the historic Chateau Yering, where luxury accommodation and fine dining are available, is next door. Yering Stations own restaurant is open every day for lunch, providing the best lunchtime cuisine in the Valley. In 2008 Tom Carson moved on and was replaced by William (Willy) Lunn, a graduate of Adelaide University with more than 24 years cool climate winemaking experience around the world, including at Petaluma, Shaw + Smith and Argyle Winery (Oregon). Whenever you buy wine there is an inherent risk, as wine is a perishable good regardless of whether it is sealed under cork or screwcap. At GraysOnline we minimise the risk to you by providing as much information as possible regarding the provenance of the wine we sell.

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

Wines displaying a 3 star designation are in good condition when we inspect and we are able to confirm some cellaring conditions but we are unable to verify all ownership and storage conditions of their history.

A wine displaying no stars doesn’t mean that there is a problem with the wine, it simply means that we have been unable to verify provenance, however a quality image is always available for the purchaser to make their own purchasing decisions.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
