Top Note Shiraz 2017 (12 x 750mL) Adelaide Hills, SA

Description:

Viticulture

Block 4 is a small one hectare block growing on very deep fine sand. We have to nurse the block withfrequent short drinks as the water drains through the profile very fast. This sand means the block strugglestowards the end of our very slow autumn ripening leading to smaller berries that enhance the skin to fleshratio and give intensity to the finished wine. Vintage 2017 had the wettest Spring we have ever experienced.500mm of rain in the months of June, July and August were followed by a record 255mm in September - themonth we would usually see things starting to dry out. Our vines burst late and as things warmed up the riskof Downy Mildew meant we needed to spray. The ground was far too wet for a tractor so we put our first twosprays on using a helicopter (which took about 15 minutes compared to my seven odd hours in the tractor!)Thankfully February and March saw much drier and warmer weather which helped ripen our fruit and slowlydevelop flavours. Due to the late budburst harvest was delayed until the 27th April with warm and dryharvest conditions perfect for hand picking on the 27th April.

Winemaking

The wine was made with minimal intervention. Grapes were destemmed and passed over a sorting tablebefore being fermented largely whole. The wine was left on skins post ferment before pressing and Malolacticfermentation (MLF). Post MLF the wine was racked into barrels; about 1/5 new French oak and the balanceinto older French oak barriques. The wine was bottled after 15 months maturation in oak.

Winery Tasting Notes

Notes Image

Red berries and satsuma plum with a hint of smoke and mint on the nose followed by a palate showing goodstructure, dark berries and a savoury note of charcuterie.

We enjoyed this wine with grilled lamb chops recently. It is light enough to match to a salmon dish or to eatwith a roast chicken. A perfect wine to drink with a tomato based pasta sauce and excellent alongside yourfavourite cut of steak, perhaps with a mushroom sauce.
