Description:

WINEMAKING

Harvested and sorted in the vineyard in the cool mornings, the ripe grapes are immediately crushed and

pumped into 35 tonne static fermenters. After 8 days of fermentation the must is pressed off with the more

structured pressings being combined with the free run juice to add structure and length through the abundant

ripe tannins in the pressings. After completing malolactic over winter 50 percent of the wine was matured

in older French and American oak barrels for 10 months prior to blending and bottling.

Packed with flavours, this Merlot displays notes of plum and ripe berries with hints of vanilla and toasty

char. Fine-grain tannins and a warm, persistent finish complement beautifully with this wines full-bodied and

lifted palate.
