These conditions preserved natural acidity while allowing Cabernet Sauvignon to develop depth and varietal clarity. After harvesting, the grapes were fermented in open fermenters to enhance structure, freshness, and the pure expression of fruit character.

COLOUR

Deep cherry red.

NOSE

Lifted aromas of cassis, dark cherry and cracked pepper, complemented by floral tones, cherry stone, and subtle cedary oak.

PALATE

Medium-bodied and vibrant, showing layers of dark plum and cherry with subtle hints of dark chocolate. Savoury notes of bay leaf and gentle spice are supported by fine tannins and lively acidity, creating balance and freshness. The palate is smooth yet well-structured, finishing long with a clean, savoury edge.
