Botrytis Cinerea is known as the “noble” rot, a fungal infection which puts holes through the side of the grape causing dehydration of the grape and amongst other things, concentration of juice within the infected grape. The natural sugar levels therefore increase and the grapes are harvested late to fully capture the intensity of sweetness and complex flavours. The result is powerfully rich and opulent with flavours of dried apricots, citrus fruit marmalade and just a note of wild honey finishing with just a hint of refreshing citrus.

Aroma

Rich aromas of dried apricot, zesty citrus fruit marmalade and hints of honey.

Palate

Rich and opulent with a refreshing citrus lift - the quintessence of botrytis Semillon. Citrus fruit marmalade flavours combine with apricot and hints of wild honey. The wine displays restrained acidity and light drying tannins which are balanced by the concentration of luscious natural sugars resulting in overall elegance and finesse.

Cellaring

This wine will benefit from aging for up to 10 years.

Food Pairing

Luscious and sweet, this wine will complement a light dessert dish such as Panna cotta, Crème caramel or even stewed fruits with vanilla Ice cream.

Our award winning, architecturally designed Cellar Door is set among the rolling green vineyards of Pokolbin, in the heart of the Hunter Valley and reflects the Tempus Two spirit to blend the essence of tradition with the magic of innovation.

Launched in 1998 as Hermitage Road, the street on which the McGuigan family lived, it soon came to the attention of the French appellation body, which took issue with the use of the word ‘Hermitage’, a protected wine region in the Rhone Valley. And so, Tempus Two, which is Latin for ‘second time’ was born.

Today, the vision for Tempus Two remains; to create a unique and distinctive range of wines from Australia’s premier wine growing regions. By blending substance with style, Tempus Two creates wines that are affordable, luxurious and artisan showcasing familiar and new varietals in innovative, eye catching packaging.
