Pepperjack is a tribute to the Barossa's rich heritage. The winemaking team has respect for traditional winemaking techniques and is also dynamic and imaginative. The Pepperjack winemakers are conscious of modern wine styles, and are creating wines that reflect their passion for this special region. The Pepperjack wines are rich and honest - showcasing the Barossa's outstanding qualities.

Just as different steak cuts have different flavour, texture and appeal - so do different Shiraz wines. The Pepperjack Graded Collection showcases two different styles of Shiraz, created by our winemaker to perfectly match two of his favourite cuts of steak: Scotch Fillet and Porterhouse.

Similar in size and structure to the Scotch Fillet McLaren Vale version but with plumier fruit, a hint of herbs and a softer looser structure, with pillowy soft tannins coating the sides rather than presenting front and centre. Oak appears less prominent too. Lots of appeal.

A lovely, vibrant, dark red colour. Blood orange and graphite - an attractive bitterness to the nose. Oak is firm. Red plum and dark cherry fruits unravel from a stable core of oak and tannin. A dark chocolate savouriness adds charm to the finish. A very good shiraz.

Winery Tasting Notes

Rich bright red in colour with a dark purple rim. The nose shows rich concentrated red and blue fruits, dark chocolate with hints of spice. The palate is rich and plush with good structure. There is a concentrated layer of red and blue berry fruit and oak which is balanced with the fine chalky tannins to give length and power while finishing soft and full of flavour.

After harvesting, the individual parcels of fruit were crushed, destemmed andfermented separately in traditional style fermenters. The wine was then pressedinto a combination of seasoned and new French and American oak barrels for15 months maturation prior to blending and bottling.
