asper “Jack” Newton Daniel was born in Lynchburg, Tennessee, as one of 10 children in 1850. As a teenager he was taken in by a local lay preacher and moonshine distiller Dan Call after the death of his parents. He began learning the distilling trade from Call and his head distiller Nathan "Nearest" Green. In 1875, on receiving an inheritance from his father's estate, Daniel founded a legally registered distilling business with Call. He took over the distillery in 1884 when Call quit for religious reasons.

The Jack Daniel Distillery in Lynchburg is situated in and around a hollow known as "Stillhouse Hollow" or "Jack Daniel's Hollow", where a spring flows from a cave at the base of a limestone cliff. The limestone removes iron from the water, making it ideal for distilling whiskey.

The mash for Jack Daniel's is composed of 80% corn, 12% rye, and 8% malted barley, and is distilled in copper stills. It is then filtered through 10-foot stacks of ground sugar maple charcoal. The company refers to this filtering step as "mellowing". This extra step, known as the Lincoln County Process, removes impurities and the taste of corn. After the filtering, the whiskey is matured in their own newly handcrafted oak barrels, which give the whiskey its colour and distinct flavour. This whisky does not follow to a calendar and is only ready their in house tasters say it is. They judge it by the aromas, the way it looks, and of course the way it tastes. It’s how Jack Daniel himself did it over a century ago. And how they still do it today.

This is the soul of American whiskey. Its distinct and unique taste comes from refining ("mellowing") the freshly distilled whiskey drop by drop through 10 feet of sugar maple charcoal. The distilled whiskey is then matured in American Oak barrels hand-made by Jack Daniel s themselves. The only major distiller in the world to make their own barrels. Each batch is made from marrying 170 barrels from all levels of the barrel houses to achieve consistent colour and taste.
