WINEMAKING

Ripening late in the summer, the vineyards require extended ripening to ensure tannins reach peak maturity. Harvested during sunlight hours, after any cool night time dew has evaporated the grapes are sorted in the vineyard and transported to the winery where they are lightly crushed to 20 tonne vinomatic fermenters for 90 days. Once pressed and when primary fermentation is complete 40 percent of the win was transferred to French oak barrels for malo-lactic fermentation and 6 months maturation.
