After missing the 2011 vintage (when fruit for the required style and quality was not available), this remarkable house-style red returns with a release that retains a secure place among the ranks of Australia's finest Cabernets. Full-bodied, mouth-filling, complex, layered - Penfolds' 2012 Bin 707 is big in every way. Characters of blackcurrant and just-baked, spiced, chocolate fondant dominate with plenty of natural fruit sweetness. The tannins are present, but not overwhelming. The exceptional make and vintage conditions of the '12 will ensure this wine will live on for decades.

Winery Tasting Notes

Colour

Deep purple, with a black, impenetrable core

Aroma

At once 707… i.e. it would appear less 100% Cabernet Sauvignon, more 100% Bin 707! Barrel ferment notes sprint past all others – the formics, smoked nuts/meats. Soon overtaken by hoisin, sweet soy sauces and concentrated tomato paste aromatics. A final wave of liquorice, black forest cake/tiramisu and choc/coffee affogato exotics. And what of the 100% new oak? Yes, perhaps the primary source of those (repressed) nutty/toasty wafts…?

Palate

Full-bodied, mouth-filling. Complex, layered. Surely not befitting the “assault of the senses” commentary overheard on a re-pour during this tasting?! A blackcurrant overlay across a base of just-baked, spiced, chocolate fondant. Tannins omnipresent, yet calmly conveyed by the wine’s lush fruits and densely textured extract. Oak totally absorbed…certainly at one with the wine.

The 1964 Bin 707 Cabernet Sauvignon was Penfolds’ first commercial release of a single cabernet-based wine. Today, Bin 707 is justifiably regarded as one of Australia’s most important cabernets.

The winemaking philosophy and barrel maturation of Bin 707 is almost identical to Grange. The Bin 707 style combines intense varietal definition with new American oak to produce wines of great richness, harmony and concentration.

Over the years the development of Bin 707 Cabernet Sauvignon has mirrored the advances in winemaking and viticulture and in this sense has served as a representation of progress and excellence within the industry.Bin 707 proudly bears the Penfolds stamp – displaying a fascinatingly complex marriage of ripe, concentrated cabernet fruit and 100% new American oak, forged together through partial barrel fermentation. It displays dark berried fruit, mocha and chocolate overtones, with warm spice notes.

Bin 707 is a medium to long term cellaring style of wine. It will comfortably gain stature and complexity across more than two decades in the bottle.

Rating 98 Sourced from Coonawarra, Padthaway, Barossa Valley, Wrattonbully and the Adelaide Hills; the fermentation is completed in new American oak hogsheads, whereafter it is matured in those hogsheads for 14 months. There is amazing depth to the purple-crimson colour. Its full-bodied colours are nailed to the mast immediately the wine enters the mouth; it's strange how the cabernet of this wine marries with the American oak, providing the ultimate Christmas cake of aromas and flavours; one of its great strengths is the tannin structure that gives the wine its exceptional length (and mouthfeel along the way).
