White Wines:

Paired best with seafood, risotto or creamy sauces, most white wines have acidity and freshness to them and are best served chilled. You will often find a white wine with floral and fruity tastes, such as white peach, pear or citrus. Most light and medium body white wines like Sauvignon Blanc or Pinot Gris undertake minimal ageing, whereas a full-bodied Chardonnay is aged in oak barrels for three to ten years. This full bodied white wine, as well as similar varieties like Ribolla have a distinctive vanilla note. For something sweeter, a german Riesling is a balance of honey and acidity, whereas an Italian Moscato is typically the sweetest white wine on the list.

Best with heavier dishes like meats, pasta and cheese, red wine is a favourite. From a full-bodied dry Cabernet with a rich aroma, to a medium-bodied Merlot with a touch of fruitiness, to a light and smooth cherry Pinot Noir, you can find a red wine to suit your tastes. For Australia specifically, Shiraz is a much loved, sweeter red wine that still has the boldness that Australian red drinkers crave. 

Rose Wines:

A mix between red and white gives a Summer perfect Rose with common tastes of strawberry, melons and citrus. The longer a Rose has contact with the skins and seeds of grapes, the deeper the colour. They are best with a light dish, to balance out spicy foods or to refresh you as a day glass. 

Sparkling Wines:

Whether it is a French Champagne or a dry Italian Prosecco, bubbly sparkling wine is a popular celebration drink and can range greatly in sweetness (so check the notes carefully!). Bubbly wine is most common with creamy entrees, fish or mushroom dishes. 

Dessert Wines:

As the name suggests, dessert wines are the best friend to all things cakes, pies and full of sweetness. These wines have a lower degree of alcohol and the fermentation process is stopped early in order to preserve the sugars. It is usually consumed in small amounts due to its strong sweetness.
