Description:

The fruit was gently destemmed and transferred to a fermenter where it was held cold before fermentation. This cold soaking technique contributes unique aromatics to the end wine, stable colour and ensures a soft texture. After fermentation, each parcel was pressed separately to tank before being racked off yeast lees. The blend was matured using French oak, with the balance of parcels being kept unwooded to retain the fruit driven freshness. All parcels were kept separate until the final blending stage with the finished blend then being filtered only once before bottling.

Winery Tasting Notes

Colour:

Deep purple, red heart with a vibrant purple rim.

Aroma:

Floral aromas of violets and rose petal coupled with fresh red berries and a touch of toasty French oak.

Palate:

Medium bodied in style but with lengthy flavour and ripe silky tannins. The wine has a lovely fleshy texture and a light tannin grip on the finish distinct to Cabernet Sauvignon.
