Sullivans Cove French Oak Single Cask Single Malt Whisky (1x 700mL), Tasmania.
Barrel TD0078 is a spectacular, ultra-premium release from the distillery’s highly revered French Oak Second-Fill (Refill) Single Cask range.
Distilled on 10 February 2006 and decanted on 1 September 2021, this exceptional whisky was aged for exactly 15 years and 6 months.
Unlike their standard first-fill French Oak expressions that age directly in intense, sticky ex-Tawny casks, TD0078 was matured in a 300-litre French oak barrel that had already been used to age a prior batch of Sullivans Cove single malt. This specific bottle was bottled at a robust 49.2% ABV.
Because the intense, heavy fruit sugars of the initial fortified wine were softened by the first batch of whisky, this second-fill approach allows the distillery`s pure, bright spirit character and raw timber notes to take center stage. According to Sullivans Cove`s Head Distiller Heather Tillott, it offers a ``wonderful way to see both Sullivans spirit and the lighter spice and herbal notes of refilled French Oak``.
Nose: Elegant, crisp, and shifting away from heavy dark fruits. It opens with vibrant fruit waves, fresh apple skin, floral undertones, and a unique, medicinal herbal elixir complexity.
Palate: Texturally impressive with a ``fun booziness`` and strong structural drive. It transitions beautifully into sweet malt biscuits, buttery pastry spices, and a refined, clean vanilla bean character.
Finish: Surprisingly thick and notably oak-forward, proving the cask still held an abundance of flavor and active wood tannins. It lingers beautifully with notes of comforting Christmas cake spice and gentle herbal warmth

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. A wine displaying no stars doesn’t mean that there is a problem with the wine, it simply means that we have been unable to verify provenance, however a quality image is always available for the purchaser to make their own purchasing decisions.
Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.
Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
