Cambridge Crossing Cabernet Sauvignon - a rich, generous, aromatic wine made from Cabernet Sauvignon grapes grown in South Australia. The vineyards are broken on sandy soils with a calcareous cushion, which allows the vine to control the water balance well throughout the entire vegetative period. Thanks to the moisture that accumulates in the soil during the spring, grapes remain on the vine for an additional 3-4 weeks, ideally developing aroma and taste. The average age of the vines is 35 years. Grapes are removed from the vines mechanically as the berries ripen, preventing them from overriding. Fermentation takes place at a controlled temperature of 22-26 ° C for a week. Then malolactic fermentation and a short exposure are carried out.
