A blend of 57% Shiraz and 43% Cabernet Sauvignon, the 2007 Parson’s Flat Shiraz-Cabernet was aged for 15 to 16 months in 60% American oak and 40% French, 40% of which was new. Very deep garnet colored, it has intense black cherry, blackberry and minted cassis aromas with nuances of tobacco, tree bark, earth and some licorice. Full-bodied with medium-firm silky tannins and high acid structuring the generous fruit, it has very good persistence. Just beginning to evolve and enter its drinking window, it should continue to cellar to 2016.

In the remote, Limestone Coast sub-region of Padthaway (just north of Coonawarra and slightly warmer), Henry’s Drive has been producing well made, regionally expressive and well priced wines since 1998. All the vineyards here are family owned so the wines are made from estate grown fruit with the majority of the plantings in Padthaway at the base of north-south hills and some on the hills, planted to a mix of terra rossa and sandy loam soils. In 2006 they purchased a 30 acre vineyard in McLaren Vale with the fruit featuring in the Dead Letter Office blend.- The Wine Advocate

The **Padthaway Parson’s Flat Shiraz Cabernet 2007** is a mature, well-balanced blend that showcases the harmony between Shiraz and Cabernet Sauvignon. The nose opens with aromas of dark fruit like blackcurrant, plum, and blackberry, complemented by hints of spice, black pepper, and earthy undertones, along with subtle oak and a touch of eucalyptus. On the palate, the wine reveals a complex interplay of rich dark fruits, savory herbs, and a bit of mocha. The tannins are smooth but still present, offering a structured mouthfeel. The finish is long, with lingering fruit and an elegant touch of oak and spice. This wine has aged beautifully, offering a lovely combination of power and finesse.

Whenever you buy wine there is an inherent risk, as wine is a perishable good regardless of whether it is sealed under cork or screwcap. At GraysOnline we minimise the risk to you by providing as much information as possible regarding the provenance of the wine we sell.

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
