Darren De Bortoli created Noble One at our family winery in 1982, to this day it is still one of the most awarded wines in history.

More than three decades after this pioneering Botrytis Semillon took the world by storm, internationally acclaimed Noble One remains the benchmark of Australian ‘Botrytis’ dessert winemaking.

Vineyards include the Chauncy block of Semillon, which was the last vineyard of Semillon for Botrytis that Deen De Bortoli planted before his passing. Also the Cercone block of Botrytis Semillon, which is one of the original blocks used for Noble One.

Careful and constant monitoring of the vineyards determines the best time to harvest the fruit for Noble One, when both the Botrytis flavour and sweetness levels are in unison.

Each vineyard is treated individually with 85% being matured in a combination of new and older French oak barriques.

We then take the very best parcels and weave them together, fuzing a harmonious blend of Noble One.

Rich, complex yet refined with a beautiful balance of sweetness and acidity aftertaste completing the picture deliciously.

Winery Profile

De Bortoli Wines is a third generation family wine company established by Vittorio and Giuseppina De Bortoli in 1928. The couple emigrated to Australia from Northern Italy, from mountain villages at the foothills of the Italian Alps, near the historic town of Asolo.

Their son, the energetic and dynamic Deen De Bortoli, (b 1936 – d 2003) expanded and consolidated the business created by his parents. Deen's children established De Bortoli's reputation for premium wine including icon dessert wine Noble One and the Yarra Valley wines.

Italian family values passed down from Vittorio remain core values, there is a culture of hard work, generosity of spirit and of sharing good food, good wine and good times with family and friends.
