Winemaking Notes

Carrington Blush is an attractive, fresh sparkling wine made from a selection of grape varieties. By allowing a percentage of the fruit to retain its natural red colour throughout the process the resulting wine has an attractive pink hue. Non Vintage styles are made using a range of vintage wines. This allows for freshness and consistency in the final product.

The fruit is harvested early in vintage to retain high natural acidity and delicate fruit flavours that are integral to the production of a premium sparkling wine. Secondary fermentation adds subtle creamy yeast complexity and gives the wine its attractive fine gas bead and mousse.
