Fermented in seasoned French oak, staying on lees for 10 months. This is wearing its time in oak on its sleeve with honeyed, nutty, waxy notes taking the lead, along with spiced pineapple, preserved lemon, chamomile, mint and lime oil. Air and a slightly warmer temperature liberate that fruit, bringing the components into balance. It’s flavourful and savoury; made for the table. - Marcus Ellis, 24 February 2025.

VINEYARD

Sourced from the Lockett vineyard in Kuitpo. The high altitude of the Kuitpo sub-region in the Southern Adelaide Hills is ideal for this variety, allowing slower ripening and giving complexity and elegance.

WINEMAKING

Fermented in seasoned French oak, and held on lees for ten months with regular stirring, creating a complex and textural wine in perfect harmony with fresh tropical flavours and spice.

FLAVOUR PROFILE

This wine is vibrant with bright tropical fruits, in perfect harmony with the complexities provided by the lees contact. Baking spice, brioche, and cashews are balanced with a zesty lemon lime curd.

FOOD PAIRING

A versatile food wine. Fresh salads with aromatic herbs. Seafood; smoked salmon, grilled prawns and light fish. Cheese; Brie, Chèvre and Parmesan.
