Viticulture:

The Padthaway vineyards are all grown on free-draining Terra Rossa soils, producing rich ripe berry fruit flavours with abundant ripe tannins.

Vinification:

Each block is harvested at peak flavour development and maturity over a period of two weeks. Yeast strains are selected to enhance fruit characters and ensure clean and vibrant wines express the true vineyard characters. Time on skins and cap management varies from 10 to 18 days depending on extraction and fruit weight during fermentation. Upon the completion of fermentation the must is gravity fed into a tank press, preventing excess extraction. The pressings of each batch are assessed before blending to produce a wine with ripe and balanced tannin extraction, that is consistent in terms of style and quality each year. Selected batches are matured in American and French oak Hogsheads to enhance both tannin structure and complexity, and blended prior to bottling.
