Viticulture:

Each of the individual vineyards and blocks of our growers along the Limestone Coast add dimensions of complexity to the final blend and ensure consistency of each vintage release. The

vineyards are all established with proven quality and moderate yields. Each block is harvested once the balance of flavour, tannin ripeness and flavour balance has been reached.

Vinification:

The cool grapes were crushed and pressed and the juice allowed to cold settle before being racked and inoculated with a yeast strain. The freshly extracted grape juice was then transferred to stainless steel tanks for low temperature fermentation to preserve the grape’s natural aromas. Fermentation is halted early to leave some residual sugar in the wine so that the desired sweetness is achieved. Cold stabilization is performed to ensure clarity of the

wine before it is ten filtered and bottled.
