Green apple, white flowers, grapefruit pith, grilled pear and talc. Lovely balance and line. Some quince and chèvre, too – quite complementary. Tongue tingling bead, super fine and lingering. Rapturous flavour in fruit weight and complexity, the culmination of tidy blending and 18 months lees ageing ahead of disgorgement. Salinity through the finish generates a gentle buzz. This is a smart house style and an aperitif worthy of opening your next dinner party. Utterly delicious.
