Viticulture:

Sourced from two individual grower vineyards which each demonstrate individual expressions of the variety due to variations in soil and climatic influences. The Padthaway vineyard produces richer tropical aromas and flavours, while the Limestone Coast vineyard, located further south shows the cooler influence with the crisp aromas and flavours of pear and apple.

All vineyards are meticulously maintained to ensure balanced yields and a moderate canopy to ensure the grapes are partially shaded, producing expressive varietal characters and a balanced natural acidity.

Vinification:

The cool Pinot Grigio grapes are lightly crushed and then pressed while still cool. The free run and pressings are separated with the pressings treated to reduce the “grigio” colour by aerating the juice before clarification. Once both components have been cold settled, the individual batches are inoculated with expressive yeast strains and fermented in temperature controlled stainless steel tanks between 13 and 15 degrees for around 16 days until dry. The individual blocks are then blended to produce a wine that best expresses the regional and varietal characters before early bottling.
